Can't believe the month of Ramadan is almost over. And then celebrate the day of happiness, Eid al-Fitr. It has become a tradition in my area that every Eid al-Fitr we prepare lots of snacks to welcome relatives and friends celebrating Eid al-Fitr.
So, this time I will make delicious cookies to fill my holiday jar to welcome Eid al-Fitr. These delicious savory and crunchy cookies are called coconut cookies. OK, I'll immediately prepare the ingredients.
To make these delicious and crunchy cookies I use white butter and dried grated coconut. OK, here are the complete ingredients:
- 200 gr white butter
- 1 spoon butter
- 2 egg yolks
- 150 gr sugar flour
- 100 gr wheat flour
- 100 gr tapioca flour
- 50 gr dry grated coconut
- 1 spoon of powdered milk
- 50 gr cornstarch
Steps to make coconut cookies
- Mix the white butter and sugar flour, then beat well, I didn't use a mixer to beat it, I just used a spatula.
- Once the sugar and white butter have been mixed and the texture is slightly soft, add the butter and egg yolks. Beat until the texture of the white butter looks softer.
- Add the flour, stir the mixture then the tapioca flour, cornstarch and dry grated coconut. For the dried coconut, I used 30 grams to mix the dough and 20 grams to coat the cookies after molding them.
For the dried coconut, I bought it at an unbranded cake ingredients shop.
- Once the dough is finished and the texture is not too hard and not too soft, what is certain is that the dough can be molded and is not sticky. Then mold the dough into the desired shape. I just made it in a rectangular shape. If the ingredients I give you are still soft, you can add flour, either wheat flour or tapioca flour. Or if you feel the dough is too hard, you can add white butter. Or if you don't think it's sweet enough, you can add powdered sugar.
- After the dough is finished molding, coat in dry grated coconut. Coat until all surfaces of the cookies are full of desiccated coconut.
- Next, the cookies are ready to be baked over medium heat. Bake until cooked then remove from heat, put in a jar when the cookies are completely cold.
These coconut cookies smell really tempting, the savory coconut makes this coconut cake taste delicious.
