Today I want to share with you one of my favorite recipes: pasta with sardine sauce. One of my favorite things to do is cook the meals I enjoy most, and when it comes to pasta, it's even better! Pasta is so versatile and can be combined with a variety of flavors that it always leaves me satisfied. Preparing a pasta dish is an experience that fills me with joy, as each bite is an explosion of flavor. Also, today I'm going to accompany the pasta with slices of fried plantain. This combination is perfect, as the sweet flavor and crunchy texture of the fried plantain beautifully complement the sardine sauce.

To start, I'll bring a large pot of water to a boil and add a tablespoon of salt. This will help season the pasta as it cooks. Once the water is boiling, I'll add the pasta and cook it according to the package instructions, which usually takes between 8 and 12 minutes.

While the pasta is cooking, I'll heat a little oil in a large skillet over medium heat. I'll add the finely chopped onion and sauté it until translucent and beginning to brown. Then, I'll add the finely chopped garlic and cook for another minute, making sure it doesn't burn. I'll add the diced tomatoes to the skillet and cook until softened. Next, I'll open the can of sardines, drain them if they're in oil, and break them up before adding them to the mixture. I'll also add the marinade and soy sauce to taste. I'll cook everything together for a few minutes to allow the flavors to blend.

While the sauce is cooking, I'll peel the plantain and cut it into diagonal slices about 1 cm thick. I'll heat enough oil in a pan over medium-high heat. When the oil is hot, I'll add the plantain slices and fry them until golden brown and crispy on both sides.

Once the sauce is ready, I'll add the cooked pasta to the pan and mix everything together thoroughly. Finally, I'll serve the hot pasta on individual plates, accompanied by the fried plantain slices. Although I don't like plantain very much, I only grabbed one so as not to disrespect it.
