Loved how you cooked the rice with a bit of oil and those celrey stalks, it perfumes the pot in a simple way.
The ginger give a clean lift to the onions and mushrooms, then that splash of soy sausee ties it all together.
As someone who meal preps after work, this looks perfect for two dinners and a lunch, easy to reheat and still bright :)
My inner number nerd says the veggie to rice ratio looks spot on.
If I skip bell pepper and add a few peas instead, will the balance stay close or do I need to tweak salt?

The great thing about this recipe is that it's very practical. You can store it in airtight containers and it stays perfect for two days. Sometimes I add peas and it's delicious too!
