Following its first half, just before blending the eggplant with different spices, we make a very famous Indian dish called Baigan (eggplant) Bharta. I was reminded of that recipe when I saw yours.😛 But I would definitely try your recipe as well cause it looks delicious. :P

        interesting! Here in Venezuela we don't usually use eggplant much in dishes, it's more like a "rare" vegetable, I personally love it because of how versatile it is! greetings
