Greetings, friends of Hive. Today I'm sharing with you a very simple recipe, with few ingredients, and above all, delicious. Today, Monday, March 24th, is a holiday here in Colombia, so it's better to take an extra day off and eat something we love. Banana pancakes are my daughter's favorite; I usually make them for her on Sundays, but I couldn't make them yesterday, so today is a SPECIAL MONDAY.

These pancakes are very simple and highly recommended for those who watch their diet. They contain no artificial sugar, protein (egg), or fiber (oats) and are truly delicious because the bananas provide that natural sweetness. This recipe is very practical, with just a few ingredients that you probably already have in your refrigerator, and you can make them for breakfast or a snack; it's delicious.
Preparation:
Preparation is extremely simple: place all the ingredients in the blender and let it sit for just a few minutes. Everything added to the glass is very soft, so it will liquefy and blend very quickly. I blend it for just 1 minute and, if necessary, add water. Those who wish can add any type of milk they like. This time, I didn't add the chia seeds; I used them as a garnish at the end.
The mixture is ready; now place it in a pan with a little butter. I cook them for 2 minutes on each side. When you see the mixture starting to compact and form holes, it's time to turn it over; it's a very quick and easy process.
At this stage, it's just a matter of repeating it as many times as necessary to make the pancakes. My mix, depending on the ingredients, can make up to 6 medium-sized pancakes; they can be eaten by two or more people.
And so we've finished making the pancakes; they're fluffy and golden. These first three are for my daughter; I usually add butter, as she likes it, and top them with banana and chia seeds.

I accompanied mine with a little honey. I must say that in this house we're a bit obsessed with pancakes; we usually make them on the weekends, because we don't usually eat sweet foods, so we treasure those cravings for dessert and wait for the weekend. They seemed so opportune for this holiday Monday, since I couldn't make them yesterday, so these are my most prized pancakes.
And I paired my meal with a special mega coffee. A drink I make often because it's delicious, packed with protein, and healthy oils. I'll share the recipe later because it's worth trying.
