
Greetings friends, I hope you are feeling well. It's been a while since I've shared a recipe through this community for food lovers like @hivefood, and that's why today I'm bringing to the table a cake I prepared with pumpkin.
The pumpkin, also known as auyama, is a vegetable with which we can prepare a wide variety of recipes, including creams and our typical Venezuelan soup, either beef, chicken or fish. It is also ideal as a side dish or as a garnish, since we can make an exquisite pumpkin puree or even make arepas, pancakes and delicious desserts such as the cake that I will present today.
The pumpkin contains great nutritional benefits, because it is an excellent source of vitamin A, C, E, B2 and B6, calcium, potassium, magnesium, zinc, fiber and beta-carotene. In addition to its different nutritional contributions, what makes this vegetable perfect is the ease with which it can be grown, since anyone with a large yard can sow its seeds and soon harvest auyama. This plant grows as a vine on the ground and gives beautiful yellow flowers that are also useful in our gastronomy.
The way of cooking this delicious vegetable is very varied, it can be boiled, steamed or roasted. It really is a phenomenal ingredient and gives us a rich flavor as well as versatility in our kitchen, it is just a matter of having creativity to include it in our preparations.
For all the above mentioned, I took this ingredient as the main star to make this delicious cake, I also wanted to pay tribute to our creole sweetness and to all those women who exalt Venezuelan gastronomy with recipes that are transmitted from generation to generation. So without further ado, let's get started....
INGREDIENTES/ INGREDIENTS
800gr de auyama | 800 grams of pumpkin |
200gr de mantequilla | 200gr butter |
2 tazas de harina de trigo | 2 cups of wheat flou |
1 taza de azúcar | 1 cup of sugar |
3 huevos | 3 eggs |
1 taza de leche en polvo | 1 cup of powdered milk |
1 ramita de canela y de clavito dulce | 1 cinnamon stick and sweet cloves |
2 semillas de guayabita dulce | 2 sweet guava seeds |
1 cucharada de vainilla | 1 tablespoon vanilla |
1 taza de pasitas | 1 cup raisins |
PREPARACIÓN/ PREPARATION
To start with the preparation of this delicious cake, we will put previously in a pot to boil the chopped pumpkin in squares with all and shell along with the sweet cloves, the cinnamon stick and the two sweet guava seeds, approximately for about 20 minutes or until it has a soft consistency. Then, remove from the stove and discard the water and let it rest to peel it and make a puree.

Once our puree is ready, set it aside. Separately, we will beat the sugar with the butter until it has a creamy consistency. Then add the eggs one by one and add the vanilla.



We will continue our preparation adding little by little the pumpkin puree. Then, we add one cup of flour and we mix with a paddle, making wrapping movements. Incorporate the cup of milk and close with the second cup of flour. Add the raisins that have been previously dredged in flour so that they are spread throughout the mixture and do not rise.
Finally, we place our mixture in a mold prepared with butter and flour. We put it in the oven at a temperature of approximately 250ºc and let it bake for about 45min or 1hr. To verify that it is ready, we introduce a height stick and when it comes out dry, it means that our cake is ready. Remove from the oven, let it rest and serve with a delicious cup of coffee hehe. The consistency of this cake will be soft and similar to a quesillo, where you can perceive the rich flavors that will make your palate explode, because without a doubt it is DIVINE.







I want to tell you that I am usually more organized to take the photos of the step by step, but I was making the cake quickly in case I ran out of electricity, since we have had problems with the electricity at home, but I made this delicious recipe and I hope with all my heart that you liked it.
