




小時候,家附近有家傳統早餐店,店前面有個大油鍋,老闆手不停歇地放油條麵糰進入油鍋,然後用筷子不停地翻動油條,慢慢地,油條會隨着筷子的翻動不斷地膨脹變大,就像變魔術一樣,而剛炸好的油條,有著酥酥脆脆的口感,咬下去會發出喀嚓喀嚓的聲音,真是好吃又好玩,而至於油條會不會太油,或者是油條是否熱量爆表,則從來不在我的考慮範圍。
然而,自從那家傳統早餐店歇業之後,我要吃到燒餅夾油條,就要跑到比較遠的早餐店去購買,太麻煩了,身為懶人一族的我,不想花太多時間在覓食上,所以,之後我就換了另一種食物,作為早餐,好險,燒餅夾油條作為經典的中式早餐之一,到處都有中式早餐店,還不算太難看見它的身影。
這次,我就在外出的路上,心血來潮的買了一套燒餅油條作為早餐,我發現到,現在早餐的花樣很多,以前只有燒餅夾油條一種選項,現在的話,燒餅還能夾蛋餅、火腿蛋、起司蛋、豬排等,玩的真花啊!不過,在我心目中,還是傳統的燒餅夾油條最搭,烤得微微金黃、外皮酥脆的燒餅,夾上一根剛炸好的油條,這種一脆一軟的搭配,正是燒餅油條最迷人的地方。
When I was little, there was a traditional breakfast shop near my home. Right in front of the shop, there was a big pot of hot oil, and the owner kept dropping pieces of dough into it without stopping. Then he would use chopsticks to keep turning the dough over and over. Slowly, the dough sticks would puff up and grow bigger as he flipped them, almost like watching a magic trick. Freshly fried youtiao had that crispy texture I loved — every bite made a crunchy crack crack sound. It was delicious and fun to watch. Back then, whether it was too oily or packed with calories never even crossed my mind.
After that traditional breakfast shop closed down, getting a sesame flatbread with youtiao meant I had to go to a breakfast place much farther away. It felt like too much trouble. Since I’m basically a lazy person when it comes to finding food, I didn’t want to spend extra time just for breakfast, so later I switched to other foods instead. Luckily, shaobing with youtiao is still one of the classic Chinese-style breakfasts, and you can still spot it at plenty of traditional breakfast shops, so it hasn’t disappeared.
This time, while I was out, I suddenly felt like buying a set of shaobing and youtiao for breakfast. I noticed that breakfast choices today are way more creative than before. In the past, shaobing with youtiao felt like the main option, but now you can stuff shaobing with egg pancakes, ham and egg, cheese and egg, pork cutlet, and all kinds of fillings. People are really getting creative with it.
Still, in my mind, the traditional shaobing with youtiao is the best match. A lightly golden shaobing with a crispy outer layer, wrapped around a freshly fried youtiao — that crispy-meets-soft combination is exactly what makes it so irresistible.
