Ablaze's seasonal vegetables and bacon stir fry

I was on dinner duty this evening and we need to do a grocery shop, so there wasn't a huge amount in the fridge, so I just had to muster something together.

Ablaze's seasonal vegetables and bacon stir fry

Ingredients to serve 2 to 3 people:
5 to slices of Bacon (rashers)
1 Red pepper
1 Yellow pepper
1 large Onion
5/6 medium Mushrooms
2/3 cloves of Garlic
Splash of Olive oil
2 Carrots
Half head of Broccoli
150g Pasta
150 grammes grated Cheese

Ok, let's get to it, get all of your ingredients out beside you and roll up your sleeves

STEP 1: Chop your garlic finely or use a garlic press like me.

STEP 2: Add a lug of olive oil to a saucepan and put on at medium heat. Put your pasta on too, so that it's ready on time. At this time I also start to boil carrots and broccoli for my kids dinner and will use some in the stir fry later.

STEP 3: Add the pressed garlic into the pan and add your sliced red and yellow peppers

STEP 4: Chop your onions and mushrooms to size.

STEP 5: Now we can add the onions, after the peppers have been simmering for around 4 minutes.

STEP 6: Give it another 3 minutes on a medium heat and then add your mushrooms.

STEP 7: Time to add your cooked bacon rashers to the mix. I cut the fat off the bacon as I prefer lean meat.

STEP 8: Time to get saucy, crack open your time of tinned tomatoes and add them to the mix and stir it all together.

STEP 9: Now we can grab some carrots from step 2 above and add to the mix.

STEP 10: Time now for our broccoli to enter stage left from step 2 above.

STEP 11: Nearly there now folks. Our Pasta should now be done.

STEP 12: This is perhaps the most important step. Get some of your pasta sauce and scoop it out and after rinsing your pasta with hot water, put it back in pan and add the sauce and mix it around the pasta, then dish it up.

STEP 13: plate up add some grated cheese and melt on and there you have it...

Very average for a Rioja, but still a Spanish wine, so floats my boat 👌🏻

Still pretty cold and wintery here, so hearty meals are the order of the day.

I wish I could say the same! We almost hit 60 degrees today, in February!

Oh really... what is typical Feb temperature there?

High twenties, low 30's and some occasional days in the teens.

A good preparation to enjoy with a glass of good wine, only the quantities of the ingredients are missing to replicate the recipe, the wine if I can estimate a couple of glasses. 😆

Ah .... Thank you for that. I have updated it now with quantities and I'll leave Vino Tinto quantity up to the chef!! 😁
