Do you like cakes? Especially to enjoy with a delicious cup of coffee or a nice cold drink with ice?... Can you imagine that? Well, I sure can! I love making cakes as a snack; I also love making cookies and rolls with sugar, caramel, and spices. Today I'm sharing a recipe for a homemade cake made with simple ingredients, brown sugar, and panela syrup. Panela syrup is made from sugarcane juice and is used in many traditional Venezuelan sweets. If you've ever heard of panela or panela syrup, then you'll love this cake recipe!

I absolutely love panela (unrefined cane sugar) because it's sweet, yet it's much healthier for us than refined sugar, which is highly processed. If you'd like to try this recipe, stay with me! You can save it or have a pen and paper handy to write down the ingredients. So, let's get cooking! 👩🏻🍳

Ingredientes(1/2 kg):

- 100 gr de azúcar morena con papelón rallado
- 1 pisca de sal
- Leche líquida 200 ml
- Esencia de vainilla 1 cucharadita
- 2 huevos
- 200 gr de mantequilla
- 500 gr de harina de trigo Leudante
- 100g of brown sugar with grated panela (palm sugar)
- A pinch of salt
- 200ml of milk
- 1 teaspoon of vanilla extract
- 2 eggs
- 200g of butter
- 500g of self-rising flour

Take a large, round bowl that has been thoroughly washed. We will use this bowl to mix the ingredients. First, add the butter with a spoon, then add all the sugar along with the grated brown sugar or palm sugar. Stir for 10 minutes to combine the butter, sugar, and palm sugar. After 10 minutes, add the eggs one by one, while continuing to stir gently with a swirling motion.

Next, we will add salt and vanilla extract to the mixture and stir. Now it's time to add the self-raising flour. We will use a sieve to sift it and prevent lumps from forming. Then, we will gradually add the flour while gently stirring the mixture, and add the milk a little at a time, stirring continuously.

Next, we add the remaining milk to the mixture and stir for 5 minutes to ensure there are no lumps. We know it's ready when small bubbles start appearing on the surface of the mixture. While it's resting, we take the baking pan and grease it with some butter and flour, both the bottom and the sides, to prevent the cake from sticking. Then we pour the entire mixture into the pan and bake it at 160°C for 40 minutes to prevent it from burning.

After the baking time has elapsed, insert a wooden skewer into the center of the cake to check if it's done. If the skewer comes out clean, without any batter residue, the cake is ready. Let it cool for an hour and then enjoy!
