Ohhhh! This brings back fond memories with my grandpa. He knew this is my favorite as a kid, and he would always call me whenever he opens a coconut with sprout. I agree, the bigger it gets, it loses the sweet flavor. Kinda spongy in texture. But the smaller ones are slightly crunchy and sweet! <3
