Cheese Tapai Cake

When I made tapai sandwich yesterday, I didn't explain in detail what tapai is. I feel like I just remembered it when I was going to write this recipe. I think many people don't know tapai because the food comes from Java, Indonesia.

Let me tell you a little bit, tapai is processed cassava that is given special yeast for several days to ferment. When successfully fermented, the taste will be slightly sour and much sweeter. So, tapai can be called processed food from fermented cassava.

If tapai is ready, then there are lots of other processed foods such as tapai sandwiches, kolak, and another famous and most popular one, tapai cake. Usually called prol tapai, because unlike cakes in general whose dough is beaten maximally, prol tapai has a softer and slightly wet texture.

This tapai cake is also the easiest to make in the kitchen, because I don't use any other tools besides a stirrer and a fork. It doesn't have to be a mixer, because this will be very fun to do in a short time.

The Ingredients of Bolu Tapai Keju:

  • 500 gr cassava tapai
  • 100 gr wheat flour
  • 3 eggs
  • 50 gr sugar
  • 1 tbsp butter
  • 70 gr cheddar cheese
  • 30 gr parmesan cheese

How ​​to Make Bolu Tapai Keju:

  • The tapai that I got had a pretty good texture, I didn't make the tapai but bought it from a traditional market, it's quite easy to get tapai here. The price is only 5000 rupiah for 250 gr. I crushed this tapai with a special tool.

  • After getting a soft texture like porridge, I added eggs, sugar, flour and butter. Stir slowly until everything is evenly mixed. Just stir, don't use a mixer to get a soft texture in the middle.

  • Grate the cheese, at the end of mixing the dough then add the cheese. I like to add cheese so that the sour taste of the tapai disappears a little, so that it can be enjoyed by many people. Tapai is a food that has a fairly high alcohol content if fermented for too long, so it has gas that can cause bloating.

  • After that put it in a stainless steel container. Finally, I sprinkle the parmesan cheese to make it look more beautifull.

  • Bake in a preheat oven at temperature of 150 degrees Celsius for 30-40 minutes, with stable temperature.

  • After bake at oven, I let it sit for a while so that it can be separate from the stainless steel container. It can be cut or eaten directly from the container, it doesn't matter!
