
Today.. the title is long, right? I'm not sure what to call this bread, because I only add whatever I want toppings. I'm so bored of eating plain sourdough country bread... And finally, I can make bread with a thrilling flavor, and you could say it's a taste I'll miss.
Every Saturday, I schedule to bake bread. Why? Because Sunday is a lazy day. Sunday is the time to watch Netflix, especially with the latest Korean dramas... Can this love be translated?
Actually, I can finally make delicious bread without feeling guilty. Although.. the sourdough isn't exactly healthy bread, the gluten use can be broken down by natural yeast.

Last night, I making sourdough starter with witi. If you have been following me for a while, you know who witi is! Ahahaha
I waiting for the sourdough to rise for 8 hours because I used a 1:1:3 ratio. So it's slow to rise and feeds very so so so slowly.
First thing first, know the right time. Use a sourdough starter while it's rising. If it comes into contact with liquid like this, it's a sign that the microbes are ready to use it and are eating it eagerly. They'll eat all the gluten, which is good for the bread dough.
After that, mix it and it becomes elastic. If you do a window test, it won't tear easily, even if it's very thin.

I use a cold ferment in the refrigerator for 12 hours and can be perfect fot your dough. So in the morning, I take it out of the and let it rest for a while. I knead and shape it at 8.00 am and then I let it rest for another 4 hours after adding the filling.

Broil for 20 minutes at 200 degrees Celsius. Finally, I have cranberry cheese chocolate sourbread.
Ingredients:
- 60 grams sourdough starter
- 265 grams high-protein wheat flour
- 15 grams sugar
- 20 grams butter
- 1 egg
- 5 grams salt
- 145 ml milk
- cranberries, cheese spread, and flaxseed
