
Trying something you've tried before, but adding a little twist, what would happen? Would that be considered something new? So here's the story...
I love making bread with sourdough. By the way, this year I successfully made yeast to make bread. Yay... I was so happy that I finally stopped using instant yeast, even though making sourdough bread requires patience. Simply put, I can get natural yeast without having to buy instant yeast, but it does take quite a long time to make bread.
The reason I made sourdough... simply because I really wanted to eat food made from natural ingredients. Although instant yeast doesn't have much of an effect, it seems like many journals say sourdough is healthier. Is that really true? I hope it's true :D

This times, I wanna to make sourdough bread with double chocolate... and you know, this is my first time making it, and I am so00 nervous that my heart felt like it racing. Ahahah, I was so afraid of failure yahh, but everything have to be tried for the first time, like when I was a baby, I could walk because I was trying to take my little steps.
Annnddd.. this is a recipe for you guys..
Actually, I use these ingredients like:
- 230 gr high protein flour
- 1 egg
- 25 gr butter
- 50 gr sourdough starter that has been fermented for 7 hours
- 140 ml fresh milk
- 10 grams of sugar
- 4 grams seasalt
- Chocolate powder and compound
- Flaxseed
OK now for the step of making this bread..
- Please add 10 gr sourdough mother, 40 gr high protein flour and 40 gr sterile water. Mix and wait for 7 hours to make this starter expand 2-3 times. Actually I do this at 11.00 pm and get the starter at 6.00 am.

- Next... I weight the flour, chocolate powder, and fresh milk in a large bowl and then mix them with the ready sourdough starter. I add the rest to a mother jar that I keep in the refrigerator. This feed should be done at least once a week.




- After mix the dough, remaining mixture of water and flour will be bulk ferment for 45 minutes. Then, I add the other ingredient such as butter, sugar, and sea salt. Then, I mix it by hand for 3 minutes olny like massage your leg, repeating the process three times in 15-minute increments.


- Finally, I mixed in the cranberries and flaxseeds. Fermented and let it rest for 3-4 hours, until the dough doubles in size.




- I didn't use preshaping, so I filled it straight with compound chocolate. I let it rest for another 3 hours, and it finally rose perfectly! Now, bake it in the oven... and this double chocolate sourdough bread...
