Shrimp and Vegetable Samosas

A month ago, I shared a recipe for empanadas. I thought they were delicious, fun, and filling. However, did you know that making empanadas wrap was a tricky? Empanadas dough is not instant, it's made with flour and water, and it's not ready available on the market.

Often, when I make empanadas, I always struggle to measure the filling. I even make a lot, afraid of not having enough, and often overdoing it. I usually save the vegetable filling, so when I want to make empanadas again, I only make the dough and heat the vegetable filling on my microwave.

It was press your time because the empanada filling had been in the fridge for almost a month. I wanted to make it into something else, but I was too lazy to make empanada dough. I had spring roll wrappers, and sure enough, I thought of making samosas today. I just warmed the filling and put it inside the spring roll wrappers.

I figured you were too lazy to scroll down for that recipe. So, I made another recipe:

Simple Ebi Vegetable Samosa:

  • 500g carrots
  • 500g potatoes
  • 100g dried shrimps
  • Spring onions
  • 5 shallots and 5 garlic cloves
  • 30g dried chilies
  • Pepper, salt, and oyster sauce
  • Spring roll wrappers
  • Oil for frying and sautéing

How to Make Ebi Vegetable Samosa:

  • I really like to use dried shrimps for the vegetable filling in samosa, but they are fine without them. They add a bit of flavor, but if you need more umami taste, you can use mushrooms stock. First, I only pure the shallots, garlic, dried shrimps, and dried chilies.

  • After they're pureed, sautee them in a little oil. After 5 minutes, I add the diced vegetables. Then, add the spring onion, salt, pepper, sugar, and oyster sauce. Adjust the seasoning before everything is better.

  • Once the vegetable filling is cook, the next step is to let it cool slightly to avoid damage it when insert it into the spring roll wrapper.

  • After that, fold the spring roll and wrap into a triangle shape like this one.

  • Fry in oil at low heat, drain the oil, and the shrimp vegetable samosas is ready to serve!
