Good morning, food lovers, I am here once again to share with you a healthy meal I had for breakfast.
I always make something healthy filled with nutrients for breakfast because sometimes I might not have the time to eat anything else till late at night, while sometimes I will not eat till the next day.
Today I had boiled potatoes with egg sauce, and I really enjoyed it, tho the pepper was too much, so the food is really hot, but that's how I wanted it anyway.
My Ingredients
- 3 medium sweet potatoes
- 10 seeds of red tomatoes
- 10 seeds of pepper
- 1 cube of Maggi
- Half a teaspoon of salt
- 30 mL of soya oil
- 1 big ball of onion.
- 2 cloves of garlic
- 1 small ginger
Preparation and Cooking
step one
I washed my potatoes thoroughly because I boiled them with the back, boiling potatoes with the back allows them to retain the nutrients and makes them healthier.
After washing, I cut them into little slices and added water to boil them, and they boiled for 20 minutes. I drained the water so that it wouldn't get softer.
Step two
I washed the tomatoes and pepper, peeled the garlic and ginger, then roughly blended them and set aside.
In a dry pot, I added the soya oil, then added the sliced onions and poured in the roughly blended tomatoes and pepper.
I allowed the tomatoes and onions to cook for 5 minutes because I wanted to drain out the water from the tomatoes, so it took some time.
As the water dried up a bit, I added the seasoning cube, salt for taste, and poured in the eggs, then I stirred them very well.
Just after 3 minutes, I turned off the cooker. I don't like cooking eggs for so long.
Final step
I peeled the potatoes and served them with egg sauce for breakfast, with a cup of clean water.
