Hello foodiesbeehive community and friends, am here once again to share with you guys a delicious meal I made.
I made okra and fluted pumpkin leaf soup and it's very delicious and very healthy.
Nigeria and some other parts of Africa enjoy okra and fluted pumpkin leaf soup, tho it is a traditional meal, it is very healthy and is filled with lots of nutrients, vitamins, and minerals, it contains iron, vitamin, and C.
Some people don't really like combining okra and fluted pumpkin leaf but I enjoy it so much, those green vibrant colors make me eat lots of this soup
Ingredients
This soup doesn't require lots of ingredients because they are vegetables that contain lots of nutrients but I love it when I make my soup have a taste different from the known taste and flavor.
- Fluted pumpkin leaf (two cups)
- 500g of beef
- 3 pieces of bonga fish
- 4 pieces of stockfish
- Three tablespoons of red oil
- 1 cube of Maggi
- 1 big ball of onion.
- 2 cups of Okra
- 6 pieces of prawn
- 1 tablespoon of black pepper
- Half a tablespoon of salt
- 100g of crayfish
Get the ingredients ready.
I washed the fluted pumpkin leaf with a little salt to remove all the dirt and sliced it into little pieces, I also washed the okra and sliced it into little pieces.
I washed the meat with warm water and removed the parts I didn't like eating.
I washed the fish and removed the bones, I washed the stockfish and the prawn, I didn't like the head of the prawn, so I removed the head as well, I placed them aside and moved to the next step.
Cooking time.
Step one
The first thing I did was to pour the washed meat into a clean pot, I added salt, dry pepper, seasoning cube and sliced half a ball of onion inside the meat, then I put it on the cooker and allowed it to cook without water for 3 minutes then I added just one cup of water and also allow it cook for 20 minutes.
Step two
After it cooked down a bit, I added the dry fish and prawn and also added the stockfish, I now added 3 cups of water to help the meat and stockfish cook very well.
The stockfish is very dry and hard so it needs time to cook very well with the meat to get soft, and also add its taste and flavor to the soup.
I allowed it to cook for 30 minutes
Step three
When the stockfish and meat had cooked very well, I added the required amount of palm oil and allowed it to cook for five minutes.
Finally step
I added the blended crayfish.
Everything cooked very well. Then I added the sliced okra and fluted pumpkin leaf at the same time because I didn't want any of them to cook, I wanted them to stay fresh and green. I also added the sliced onions and allowed them to just 1-2 minutes.
The result
Yummy 😋 and delicious, so green and very healthy, it can be served with any carbohydrates of your choice.
In summary, I will say that this week I devoted myself to trying new recipes has really proven to me that cooking is just not the process of mixing ingredients, there is more to it, so let's keep going.
