Nourishing potato porridge with dry fish.

Greetings, everyone, it is a new week, and there are some new goals I set for myself, trying out new recipes is one of my weekly goals.

Today, I made porridge potatoes for breakfast, and it came out so well and delicious.

Porridge potatoes are a very healthy meal enjoyed in many parts of Africa, and it is a very rustic dish when it's prepared with some fresh tomatoes, onions, and dry fish, with a little touch of garlic, ginger, and turmeric, the flavor is given.

Let's check out how I made this yummy potato porridge.

Ingredients

  • 5 medium size sweet potato
  • 2 dry fish
  • 5 seeds of fresh ripe tomatoes
  • 7 seeds of pepper
  • 1 big ball of onions
  • Two tablespoons of red oil
  • 1 cube of Maggi
  • A handful of crayfish
  • 1 tablespoon of salt

Potato Porridge can be prepared with Irish potatoes or sweet potato, I chose sweet potatoes for my porridge.

The dry fish is called Bonga fish but you can use any dry fish of your choice to give your porridge that luxurious look and taste.
I love onions a lot because they are very healthy for the body and they're also very tasty in any meal.
Ginger, garlic, and turmeric are my local spices, and they also add good taste and make the meal healthy.
I added fresh tomatoes just a little to make my porridge more nutritious

Get the ingredients ready.

It took me some time to prepare the ingredients for this meal, first to wash, peel, and chop the sweet potatoes into little pieces.


I removed bones from the fish and washed them as well, I washed the tomatoes, pepper, and crayfish, then poured them into my blender, added the garlic, ginger, and turmeric, and blended smoothly.


I sliced the onions and kept them aside then I started cooking.

Cooking time.

The most important aspect of making this delicious meal is to allow the potatoes to boil before adding any of the ingredients, this helps the potatoes to get soft and absorb the ingredients.

So, I added three cups of water to the chopped potatoes and allowed them to cook for five minutes.


Then I poured in the palm oil and allowed it to cook, once it cooked down, I added the dry fish and Maggi, then allowed it to cook for three minutes.

After the fish had cooked down, I poured in the blended tomatoes, pepper, and crayfish and allowed it to cook for more than five minutes.

Then you see the beautiful aroma and colors coming out, then I added the blended ginger garlic and turmeric.

Once the potatoes are soft I added salt for taste and stirred them very well then wait for more 3 minutes.

I love my potato porridge very soft without lumps of potatoes so I give it time melt down and I smash the little ones left, then stir it very well and food is ready.

This meal is not just my regular meals, this happens to be my first time of adding ginger, garlic and turmeric to my porridge and it tastes so good and makes the meal more healthy with spicy flavors.
