That looks great! I honestly forgot what I wanted to do with the greens, and put them into the roasting dish and pickled them with the rest of the beet :-D I also had exactly 4 rocoto chili in the garden that were ripe, so now my pickled beets are super spicy, too. Going to let them sit for 4 weeks and then see how they turned out!
