How I Made Wet Cassava Chips (Mpakata): A Popular Nigerian Snack

Hello my lovely hiveans!

Today, I will share how I made a
delicious Nigerian street food called Mpakata, also known as wet cassava chips, Bobozi, air condition, abacha mmiri, or akpu mmiri. This snack is made from white boiled cassava, sliced, and soaked overnight.
To make homemade cassava chips, follow these steps:

Peel and Boil the Cassava: First, thoroughly wash and peel the cassava. Add water to a pot and boil the cassava for approximately 30 minutes. If boiling for personal consumption, you can choose to boil the cassava without peeling it. However, for a more visually appealing presentation, peel the cassava before boiling,but for these cassava chips I made my aunt already boiled it without peeling it that's why i proceeded with peeling it.

Slice the Cassava: After boiling, let the cassava cool for a few minutes. Using a kitchen knife, slice the cassava into thin chips.

Soak the Cassava Chips Overnight: Fill a bucket with water and place the sliced cassava inside.Leave the cassava chips soaking in the water overnight.

Wash and Prepare the Cassava Chips: The following day, wash the cassava chips thoroughly, removing excess starch. Dispose of the soaking water and wash the chips one more time for good measure, Your wet cassava chips are now ready to enjoy!

In conclusion, serve the wet cassava chips from a bowl of salted water. You can enjoy them with coconut or groundnut for a truly delicious and mouthwatering experience. Ohhh it's wet, I know some cassava chips with cheese powder. I haven't tried it yet though. I'm also curious with this wet cassava chips, it looks interesting. Can you also fry it?
