Hi everyone, how about a simple, quick, yet tasty and healthy protein cake?

Just a heads up, it is important to let it cool properly before serving and you will be delighted. I read comments online from people who tried it while it was still hot, and they went like this: "Ugh, it is like mud." "You can eat it once and never again." "What is this, scrambled eggs with strawberries?" xD

Maybe my small tweaks helped make the cake more than satisfying, I am not sure. I did not try the basic four ingredient version from the internet because I did not want to waste all the ingredients for nothing, so I followed my instincts and used my own logic and cooking experience. 😁

The recipe from the internet literally went like this:
4 eggs plus 3 large ripe bananas plus 400 grams of Greek style yogurt plus 150 g of blueberries. And that's it.

And here is everything I used:

~ 4 eggs

~ 4 medium ripe bananas

~ 400 grams of Greek yogurt

~ a pinch of salt

~ 2 heaping tablespoons of coconut sugar

~ almost 300 g of strawberries (I overdid it a bit there, but I will explain that in more detail later in the text.)

Preheat the oven to 190°C. Put the eggs, yogurt, sugar and salt into a blender and mix well, then add the banana pieces. Blend a little more until you get a beautiful airy mixture.

Line a baking tray with parchment paper and pour the mixture into it. As for the tray, I used a slightly larger rectangular heatproof dish, and that is why cake turned out thin and I had to roll it into a roll to give it some height so I could slice and serve it once it cooled. It actually turned out quite fun that way. You can simply use a smaller tray from the start and cut the cake into squares afterward.

As for the fruit, use whatever you like. I chose strawberries because they were the only ones I had in the freezer. Chop them into smaller pieces and sprinkle them over the batter. 300g of strawberries is definitely too much. 200g would be perfectly fine, and for big sweet tooths up to 250g, especially since the strawberries I used were more than ripe and very sweet before freezing. 🍓

Now comes the part where you put the cake in the oven and forget about it. Literally, haha. xD
Never fewer ingredients and never a longer bake, it needs a good 50 minutes to 1 hour. Yes, I know it sounds ridiculous, but that is how it is. I guess it is because all the ingredients are more or less moist, so it takes quite a while for all that water to evaporate.

Here you can see how I rolled it up, slowly lifting it together with the parchment paper. You can also notice how "moist" the cake is, although less red fruit would have fixed that.

But honestly, it becomes so good once it is properly cooled. Juicy, tasty and literally made out of almost nothing.

And it has one bad side. There is not enough of it. Next time I am making a double batch and maybe I will try it with some other fruit too. 😍
Ah yes, I forgot to mention. With this cake you can either serve ten people right away, or enjoy it yourself about ten times, hihi, the choice is yours. In any case, for a larger group I recommend making a double batch and you will have no worries.


So yes, this might not be a real cheesecake and maybe it does not look impressive, but give it patience and it will reward you. Sometimes the simplest things turn out the nicest. If you make it, do not judge it too early, let it cool, make yourself a coffee or tea, cut a slice, sit down and enjoy a quiet little moment. That is kind of the whole point.

I think I definitely wouldn't turn down a dessert like this. Judging by its appearance and ingredients, it shouldn't be too high in calories! 👍

I was just doing some calculations, and if I figured the calories per slice correctly, they range from 130 to 180 kcal, 130 per 1 piece out of 10 (let's say there was 10 smaller ones) and 180 if I want bigger slices, like 7 pieces. Not too much, hihi. If you want it for breakfast just eat 2 pieces and you are fine until lunch. ❤️ That's how I am lying to myself. xD
