A long time ago after kids, I realized just how much I needed coffee. The problem with machines like Keurigs and the like is they don't put out the volume of coffee I wanted. I ended up going to Walmart to pick up a Mr. Coffee to brew coffee.
Mr. Coffee
The model I chose had a nice auto-shut-off feature, so I didn't have to worry about forgetting to turn it off. It also let me program it to start brewing at a specific time, which was very handy.
As time went by, the delayed brew started not working. I noticed the clock wasn't keeping proper track of time. In a single day it would speed ahead and be off by at least 5 hours. There was no way to fix it, so I had to stop using that feature. One day, I set the machine to brew and it clicked off after a few seconds and beeped, indicating it was "done brewing." I checked the pump, water basin, filter, and everything else I could inspect. Nothing was amiss, so I chocked it up to an electronic piece having gone bad.
Desperate Times
I still needed coffee. My wife looked online and found a recipe for iced coffee that could be made with an Instant Pot, which we had. Not having to pay money to replace our defective coffee maker appealed to me. The recipe took only five minutes and would make enough coffee for a week. I was sold!
The Coffee Recipe
The recipe came from The Salty Pot. To spare you a LOT of reading, I've summarized what all is involved.
Grind up 1.5 cups of coffee beans and put them in the Instant Pot
Fill it with filtered water to just below the maximum capacity line
Add a tablespoon of cinnamon (Optional, but I like it)
Mix and let it steep (How long you let it steep is up to you. I only let it steep for maybe 5 minutes.)
Seal it up and set it to cook for 5 minutes, and let it cook
That's it. When it's done, you'll want to let the pressure drop naturally.
Once the pressure has dropped, you will want to remove the lid and let it cool down. I bought washable filters that have a handle so I can put it on top of a large bowl or measuring cup, pour the coffee through the filter and strain out the grounds. You'll be left with a sludge you can throw out.
I got resealable Mason jars to store it all. The recipe fills up 4-5 jars, and they can be kept in the fridge for later. This will be enough to last me the whole week and doesn't take long to make.
The big bonus here is that the caffeine you get from this method is exponentially stronger, so a little bit of coffee goes a long way. 😉 So, if your coffee maker goes out, you want stronger coffee, or just want to try something different, I'd highly recommend this recipe.
