Here is a dish that is one of my favorites and coincidentally my husband's favorite too! I cannot cook this dish frequently because we are a little bit far from the wet market. The name of the dish is called "Milk Fish is White Vinegar". This dish can be cooked in many ways. But the standard is just Milk Fish with no vegetables added except for the green pepper (green pepper makes the dish very aromatic).
The vegetables that can be added to this dish are Snow Cabbage, Bitter Melon, and Sweet Potato Leaves. My husband and me prefer this dish to have either of the vegetables but I cannot get any of them. The young shoots of my husband's sweet potato leaves are all gone (taken by his relatives yesterday).
This dish is better with large Milk Fish (not small, not, medium, and not extra large, just large). Because is the sweet spot which is perfect for this dish. Aside from White Vinegar, any type of vinegar can be used in this dish whenever White Vinegar is not available.
This is also one of the easiest dishes to cook because you just combine all the ingredients in a bowl and let them boil.
The cooking time for this dish is 10-15 minutes. So, yes, this dish is quick to cook too just like it is so easy to prepare.
Ingredients
- Milk Fish (2 pieces, large)
- Onion ( 1 pc, small)
- Ginger (1 pc, small)
- Garlic (4 cloves, small)
- Green Pepper (3 small, any size)
- Ground Black Pepper (3 grams)
- White Vinegar
- Salt
Preparing the ingredients
I just peeled and sliced the onion
I just peeled and slice the ginger
I just peeled and sliced the garlic
I prepared the Milk Fish in advance

I prepared the green pepper by washing it with water

I prepared the ground black pepper

I prepared the white vinegar

How to cook
1. I just combined the ingredients in a bowl

2. I added some water, enough to submerge all the Milk Fish (the less the better)

3. I added the ground black pepper

4. I added some salt, the less the better, so that you can adjust the saltiness later on, then let them boil

5. I added the vinegar (about 50 ml, the less the better so that the sourness can be adjusted later on), then let them boil

6. When the milk fish is cooked and the taste is what I like I turned off the heat.

7. Add some in a bowl then serve. This is perfect for hot rice.
