Claire's Crazy Cakes, Bakes and Kitchen Hacks - Chapter 77- Fathers Day: Part 1

Whoops! I've been baking up a storm again and forgot to update you guys! So, with baking projects as big as these, I like to break up the content into parts so it's well, easier to digest! Lol.

So here in South Africa, Father's on Sunday the 15th of June and I'm making box sets of cookies, cupcakes and, of course, socks! No father's day is complete without them! Lol. It is the middle of winter here though, so keeping Dad's feet warm is a serious priority, especially with @zakludick who is always working so hard, into the wee hours of the morning.

I ordered the socks online and they should be arriving in the next day or two. I'm super excited, and a bit anxious. I need them to arrive before Friday so I can be on time for my clients!

I picked out some totally awesome "Nerdy" socks from Star Wars and Nightmare Before Christmas.


As for the cupcakes, I have a huge amount of surplus from Easter that I froze. These are the bases I'm talking about now, not the icing. So, after defrosting 2 chocolate and two vanilla ones, I actually did ice them with some leftover icing from Meren's cake that just happened t be the colour I needed. I them promptly ate two of them, one vanilla and one chocolate and I can happily report that both recipes freeze extremely well and were moist and tasted Divine once defrosted! Almost lie they had just been baked! This is great to know for the future!

As for the little fondant tags that I'm decorating the cupcakes with, I realized that I am way overthinking the whole process and that I already had a huge amount of leftover blue fondant from Meren's cake. I made a few of these, but I think it will be way easier to just roll out blue fondant instead of painting on food colouring. Well, they gave me a good idea of what I wanted and worked for advertisement purposes, so you live, you learn, I guess.

Then lastly, I have been biding my time and waiting for the right time to bake the final component of my father's day box set: the peanut chip, chocolate double butter cookies. And OMG they are F **** delicious!

Here I am this morning at 4h30 AM getting ready to get my bake on! It's a good time to bake, especially on the weekends because there's no one around to get in my way :p Tomorrow I'll be doing pride cupcakes with @aimeludick so I needed to get this out of the way TODAY. Still. What kind of crazy person wakes up a 4am to bake? Me, apparently 😜🤦‍♀️

Actually, I made a booboo with the Cocoa measurements and misread the recipe completely, so instead of 2/3rds of a cup, I added a cup and a half! Luckily I realized this before spooning them onto the parchment paper or baking them, so I could add a few things to compensate, like a little extra baking powder and butter. This booboo also lead me to an ingenious idea: adding a tablespoon of syrup and a tablespoon of honey!

Needless to say, they are absolutely delicious! I will share the recipe in a separate post, so keep your eyes out for that!

It's so exciting to watch my little business grow and to learn as I go along. I love the kids and @zakludick have prioritized my "baking essentials" cupboard!😜

It's been amazing how supportive my friends and family have been. Just look at these awesome baking tins that @loadreaper has "lent/gifted" to me!

I cannot WAIT to try out the heart cake one obviously, but it's also cool to have another 24cm cake tin as I use these the most for layered cakes and more tins means I can stick more layers in the oven at once! I'm also really excited about the square tin, that I'll probably use for Matthew's birthday, coming up in July! They are all springform tins, which is the type of tin I love the most. It's just easier to get your cake out of. There's nothing worse than a precious creation being destroyed due to it sticking or becoming unremovable. Then you just end up eating the cake out of the tin in sadness. Lol.
