It is 10 am and I am absolutely bushed! I guess it's partially my fault, but I like to get as much done before anyone wakes up as I can. Normally I am up and around 4am but I was up at 2am this morning, working my butt off (and stuffing my face with Oreos sssssshhhhh!🤣🤣🤣).
So with all the prep work finally finished I can take a break for a day and do the assembling tomorrow or on Saturday as Matthew will be spending most of the weekend with his biological dad.
I was 100 % right that I had to make a few tweaks to the recipe, for the icing and the batter but good heavens, how beautiful is that red? I am so excited to slice open the cake on Sunday.
It was also super cool to watch the vinegar, buttermilk and baking soda doing their magical chemistry and seeing those lovely little bubbles appearing, almost like champagne!
My hope is that the texture will be velvety, moist and fluffy! It looks good already and the cake and all it toppings have taken over the fridge!
I will probably do a crumb coat tomorrow and the final icing on Saturday.
I am so excited that @matthew-williams chose this to be his birthday cake. It's been such an awesome challenge.
I will obviously do one more post after this one to show you guys the completed cake and I'll share the recipe tweaks I figured out in that final post!
