Exactly a month ago, I made a post about my food adventure on Lavender Street. I featured a noodle place called Lam’s, known for their abalone noodles and salt-baked chicken. Unfortunately, I didn’t get the chance to try the chicken that day because it was already sold out when I arrived.
Luckily, I recently came across one of their stalls at a food court. I was surprised to see them opening in a shopping mall, as I’m more used to seeing them operate in standalone locations or as full-fledged restaurants. Still, I was excited and, without hesitation, I ordered a set of salt-baked chicken.
They offer two options: a whole leg or a boneless thigh. For me, it's an easy choice. I went with the whole leg. There's just something satisfying about eating chicken that’s still on the bone. It adds to the experience in a way that boneless cuts don’t.
I guess that says a lot about the kind of eater I am. I find boneless food a bit boring. The same goes for fish. While some prefer fillets or deboned fish dishes, I enjoy the kind that makes you work to peel the meat off the bones. It’s the same with shellfish. I like eating the meat straight from the shell. For me, the flavor feels more complete and the experience is a lot more fun.
Back to the salt-baked chicken... I didn’t regret ordering it at all. I loved the subtle, natural flavor of the chicken, simply seasoned with salt. Maybe there were some herbs or a bit of flavored oil drizzled on top, but if so, they were very subtle. What really came through was the pure aroma and taste of the chicken, enhanced by the salt. It was a lovely experience.
The chili sauce was a great complement too, adding both flavor and a bit of heat to the simple dish. Since I’m not a big fan of overly spicy food, I just dipped lightly and it still tasted great.
If you’re someone who enjoys simple yet flavorful food, Lam’s salt-baked chicken is definitely worth a try. It’s a dish that reminds you how satisfying honest, well-prepared ingredients can be. I’ll definitely be back for more... and maybe next time, I’ll finally get to try the abalone noodles too!
