Teriyaki Air-Fryer Chicken... My “Small Steps” Homecooking Era (LOL)

So… I’m taking homecooking seriously now, LOL.

One of my resolutions this year is to prepare my own meals, not every single day (let’s not get too ambitious and burn out by Tuesday), but as often as I can. And since my air fryer has been idling for way too long, I figured: why not put it to work and let it drag me into my “maybe I’ll learn to really cook someday” era?

That’s the thing about learning a skill, right? It takes time. It takes repetition. It takes small wins that make you feel like you’re improving, even if you’re still very much in the “I hope this doesn’t end up dry” stage. I’m choosing to take it one step at a time, instead of trying to become a full chef overnight.

Last night’s mission: air-fryer grilled chicken.

The Grocery Haul Energy

I grabbed some thawed chicken thighs (simple, reliable, and honestly hard to mess up if you treat them with a bit of care). Chicken thigh is such a forgiving cut too... juicy, flavorful, and not as easy to accidentally turn into cardboard. That alone gave me confidence.

Then I stared at my sauce options like it was a personality test. I don’t really know how to make a proper BBQ sauce from scratch yet, and I wasn’t in the mood to start mixing ten ingredients like an experiment. But I do love teriyaki sauce. It has that balance of savory + sweet + umami that makes almost anything taste like it belongs in a proper meal.

So I picked up a bottle of Kikkoman teriyaki sauce, one of those versatile sauces you can throw on chicken, fish, or pretty much any protein when you want an easy win.

No Recipe, Just Vibes

Confession: I didn’t search any recipe for grilled chicken. I simply read the suggested use on the back of the teriyaki sauce bottle and followed my instincts. (Which is basically “marinate it and hope for the best.”)

I poured the teriyaki over the chicken, added a little sea salt (because I still want that base seasoning), and finished with a pepper mix for that extra bite and fragrance. Then I let it marinate for about half an hour.

While the chicken was soaking up all that flavor, I prepped the sides: baby carrots and broccoli. Part of me did it for health. Another part of me did it for the color combo, because the green broccoli and bright carrots make the whole meal look more exciting, like I tried harder than I actually did.

Air Fryer Magic (20 Minutes of Suspense)

Once everything was ready, I lined the air fryer basket with foil (for easy cleanup, because motivation disappears fast when dishes pile up). I popped the chicken in and let it cook for about 20 minutes.

And this is the fun part: discovering how cooking transforms things. The teriyaki sauce started to caramelize and darken at the edges, turning glossy in some spots and slightly charred in others, in a way that smells like effort. The chicken skin (and surface) took on this deep brown sheen, like it was being “grilled” without an actual grill.

When I opened the air fryer, the aroma hit first, sweet soy notes, peppery warmth, and that roasted chicken smell that instantly makes you hungry even if you weren’t hungry five minutes ago.

The Plate Moment

I plated the chicken with the broccoli and baby carrots, and honestly? It looked like a real meal. The teriyaki glaze gave the chicken that sticky, savory-sweet finish, and the veggies helped “reset” the richness. The carrots were naturally sweet, which matched the teriyaki. The broccoli added that clean, green bite that makes you feel balanced (even if you’re still thinking about adding extra sauce).

I also sprinkled a bit of mixed peppermint and herbs for aroma, nothing too fancy, but it added a fresh lift that worked surprisingly well with my simple taste.

Overall

This was a small but satisfying win. I like the balance of savory, sweet, and umami from the teriyaki, and I love how the air fryer makes cooking feel less intimidating. It’s quick, it’s beginner-friendly, and it still delivers that “I made this” pride.

Now I’m already thinking… what protein should I apply this to next?
