Pho Bo -my own style

Do you also love Pho Bo? When I tasted it first I was instantly in love and startet. to try it by myself at home. After a few rounds of trial and error I found my final recipe for 3 Persons:

  1. boil approx. 1200 ml water
    Add:
    2-3 nice meat bones
    1 onion
    1 thumb-sized piece of ginger cut into small pieces
    lemongrass (crush the end a little)
    1 teaspoon each of peppercorns, coriander seeds, fennel seeds
    2 star anise
    1 cinnamon stick
    1 bay leaf
    2-3 cloves
    boil everything for a good hour with the lid on

  2. prepare in the meantime:
    Approx. 200 ml water, 80 ml soy sauce, 80 ml fish sauce, juice of one lemon - mix everything together
    When the hour is up, pour everything into the meat stock and simmer for another 30 minutes
    Then pour through a sieve.

  3. cook the rice noodles according to the instructions and divide between 3-4 deep soup bowls

  4. Cut approx. 100g of beef fillet per person into wafer-thin pieces (works best when slightly frozen) and spread raw over the noodles, then cover with the boiling hot broth - it will become even within seconds

  5. garnish with freshly chopped coriander, chillies, spring onions and limes to taste

Okay @foodiesunite, got it - I just was in a misunderstanding that this rule is for the very first post - wich I complied. So, I will add three pics here as well, although they have nothing to do with my recipe? Sorry for that as well, since I don't have options to picture myself while cooking...
And a question: How long will I be considered a "new" so I have to add these three pics of mine?
