We’re back with today’s recipe! This time I cooked with my sister-in-law, and it was fun and faster with both of us working together. I learned a few tricks that I’ll be sharing with you all below, hehe.

Ground Beef with Rice
If by any chance you have leftover rice from the day before, take advantage and use it for today’s meal. As for the ground beef, it’s super easy to cook, tastes great with pasta, but it also has its own special touch with rice!
Ingredients
- Ground black pepper
- Salt
- Paprika
- Carrot
- Onion
- Garlic powder
- 1 garlic clove
- Green onions
- Oregano
- Soja
- Ground turmeric
- Olive oil




Instructions
- Don’t forget to always wash the vegetables, it’s very important!
- Cut everything into small pieces to make cooking easier.
- Add the garlic clove, garlic powder, oregano, turmeric, and pepper to the ground beef to taste.As you know, I like it quite intense. Then, after chopping all the vegetables, add them and mix everything with your hands. Let it rest for a while while you prepare the rest.
- Heat the pan with olive oil and add the seasoned beef to cook. As it starts to color, add a little soy sauce (remember, it’s to your taste) but for me, I just added a bit to enhance the color of the beef.
- Finally, add the leftover rice and sauté everything until well combined!
Pumpkin Soup (Auyama)
My sister-in-law felt like making a soup for all of us, and I thought it was a great idea. I’m not a huge fan of soups or creams, but pumpkin soup is really delicious and easy to make.




Ingredients
- 1 medium pumpkin
- 2 medium potatoes
- Salt
- Cilantro and green onions
- 2 garlic cloves
Instructions
- Cut the pumpkin into medium-sized pieces, remove the skin, and also take out the seeds (if you have enough space in your backyard, you can plant the seeds and grow your own pumpkins, hehe).
- Peel the two medium potatoes and cut them into medium pieces for boiling.
- Put the pumpkin and potato pieces into a pot with enough water and start boiling until they soften.
- Once the vegetables are ready, use an immersion blender to puree everything into a delicious creamy texture.
Air Fryer Fries
This was my favorite part of the lunch, super simple and delicious. Having a bit of fried food once a day shouldn’t be a problem, haha.



Ingredients
- 8 potatoes
- Ground turmeric
- Garlic powder
- Ground pepper
- Salt
- Olive oil
Instructions
- First, peel the potatoes, wash them if needed (in this case, it wasn’t necessary), and cut them into small cubes due to space, our air fryer isn’t that big, haha.
- Here’s a great trick! My sister-in-law asked for a plastic bag to add the cut potatoes and season them with the spices, garlic, salt, and olive oil. We close the bag and shake it to coat all the raw potatoes with the seasoning.
- And done! Now, pop them in the air fryer at 200°C (392°F) for 12 minutes. It’s not necessary to serve with cheese; they have a delicious and unique flavor. They didn’t come out super crispy, but as long as they were soft, it was enough. It’s not technically fried food, but it’s a healthier option.

This lunch is special thanks to my sister-in-law’s touch; I’d say she has a more homemade flavor that we all love at home. The last thing to do is plate everything so we can have lunch together and enjoy. The smells and colors of the food made me hungry, believe me, my plate was empty: soup, ground beef with rice and veggies, and “fried” potatoes from the air fryer. You can pair it with your preferred juice; in our case, we had it with cold water, haha.
