Chicken and Vegetables My Way 🥫🍗 (using some pasta we had in the fridge 😅)

Chicken will be the main protein in our dish, and the sauce will provide the most flavor and a smooth texture to the pasta. We'll accompany the chicken with onion and red bell pepper, and to complement it, we'll use some frozen vegetables with soy sauce.

Ingredients:

  • 250 g of sliced chicken
  • 5 tablespoons of tomato sauce
  • Pasta
  • Olive oil for cooking the chicken and vegetables

Instructions

Preparation of the Chicken

  1. Marinate the Chicken: In a large bowl, place the 250 grams of sliced chicken. Add 2 tablespoons of ketchup, 2 tablespoons of gaucho meat seasoning sauce, a pinch of salt, ground black pepper to taste, and the 4 finely chopped garlic cloves. Mix all the ingredients well until the chicken is well covered with the sauces and seasonings. Let it marinate for at least 30 minutes to absorb the flavors well.
  2. Preparation of the Onion and Bell Pepper: Chop them into small portions to sauté in the pan with a little olive oil and salt before incorporating the chicken.
  3. Cook the Chicken: In the same large pan with the vegetables, add the marinated chicken and cook until golden and well cooked, approximately 5-7 minutes on each side.

Preparation of the Pasta

  1. Here we'll make a small parenthesis; I used some pasta that was in the fridge, about 500 grams, so I just took it out and placed it in a pot to heat up, without adding salt or oil.
  2. Add Tomato Sauce: Add the 5 tablespoons of tomato sauce to the cooked pasta and mix well until the sauce is well integrated and the pasta is well coated. Cook over low heat for a few more minutes so that the sauce heats up and mixes well with the pasta.

Preparation of the Frozen Vegetables

  • Cook the Frozen Vegetables: In a separate pan, heat a little olive oil over medium heat. Add half the bag of frozen vegetables and cook until tender. Add a little soy sauce and a pinch of salt to taste. Cook for a few more minutes until the vegetables are well seasoned and cooked.

Plating the Dish

  • Mix the Pasta and Chicken: Add the mixture of chicken and vegetables to the pot with the pasta and mix well until everything is well combined.

And that's it! You can now serve and enjoy this super quick and delicious lunch with your family.
