Ground beef stew with ullucos (Eng/Esp)

Ulluco is a tuber from the Andean region that absorbs a lot of water. It has a soft texture, high nutritional value, and does not change the flavor of other ingredients when combined with them.

Ingredients:

  • 200 grams of ground beef
  • 150 grams of ullucos
  • 1 carrot
  • 1 onion
  • 1 tomato
  • 5 cloves of garlic
  • 1 teaspoon of paprika
  • 1 teaspoon of cumin
  • 1 teaspoon of all-purpose seasoning
  • 1 packet of heavy cream
  • Salt to taste
  • Oil

Preparation:

I washed the ullucos, covered them with enough water, and put them on to boil, adding a little salt. I checked the texture with a fork, and when they were tender, I turned off the heat. I drained the water, rinsed them with cold water, and sliced them.

I heated a little oil in a pan and added the ground beef. I crushed the garlic and added it along with half a teaspoon of paprika, cumin, and seasoning.

Then I grated the carrot, onion, and tomato, and in another pot I sautéed the onion first, then added the tomato, and finally the carrot.

I mixed everything well and added the chopped ulluco. I seasoned it with half a teaspoon of paprika, cumin, and sazanatodo.

The idea was to make a thick sauce, and when I achieved this, I added the ground beef. Then I poured in the cream and checked the salt. I covered the pot and cooked for ten more minutes to blend all the ingredients. Then I enjoyed my delicious lunch with rice.

Lavé los ullucos, les coloqué suficiente agua y los puse a sancochar, le eché un poco de sal. Con un tenedor comprobé la textura, cuando estuvieron blandos apagué. Retiré el agua, los limpié con agua fría y los corté en rodajas.

Monté una olla con un poco de aceite y coloqué la carne molida, trituré los ajos y los agregué junto a media cucharadita de paprika, comino y sazonatodo.

Luego rallé la zanahoria, la cebolla y el tomate y en otra olla sofreí la cebolla primero, luego sumé el tomate y finalmente la zanahoria.

Mezclé muy bien y añadí el ulluco picado. Condimenté con media cucharadita de paprika, comino y sazanatodo.

La idea era que me quedara una salsa espesa, cuando logré este punto agregué la carne molida. Posteriormente vertí la crema de leche, en este punto, comprobé el punto de sal. Tapé y cociné por diez minutos más para integrar todos los ingredientes. Así disfruté de mi delicioso almuerzo con arroz.
