I want to share a little story of how I made this delicious native Nigerian jollof rice and beans.
So growing up as a child, I always watched my mother cook for the family. I'm always fascinated by how she will combine all the ingredients to make a delicious soup and being the first child, I would always assist her in the kitchen, as such, I had deep interest in cooking.
Right now as an adult, cooking has become second nature to me, I can even cook in my dream...lol.
All I'm saying is that, I've become so good at cooking that, even my mother can't come close.😁 Whenever I cook, everyone rushes the food because it's always so good, they don't wanna miss a taste.
So yesterday after a workshop on @spendhbd with my mom @ijelady, we discussed on what to cook and that's how we visited a listed shop on spendhbd and bought rice and beans and some other ingredients.
After that it was time to start cooking, and I've always had this jollof rice recipe in my head that I wanted to try, and now is my opportunity to get creative in the kitchen. After some hours of preparation, my ingredients were ready to hit the pot.
Unfortunately I didn't capture all the ingredients, but above are the few ingredients I was able to capture. There you can see fresh tomatoes,🍅 cayenne pepper,🌶️ dried prawns,🦐 fresh fish, diced onions, and some scent leaves.
So first of all, I started by boiling my rice and beans, but unfortunately I didn't capture this cause I was busy recording the cooking process. After boiling the rice and beans separately, I started cooking the fish. I seasoned it with some salt, seasoning cubes, pepper, onions, thyme, etc., and allowed it to cook for some minutes, took it off the heat and it was ready.
After that, it was time to start cooking my jollof rice and beans properly. So for this rice, I used palm oil or red oil as it's commonly called, that's why I called it native Nigerian jollof rice/beans.
So I started by heating up my pot on low heat, then I added my palm oil. After that I fried my fish with the palm oil.
I did rhis because I wanted my fish to have that local palm oil flavor. Unfortunately I didn't capture all the steps to preparing this jollof rice, but after everything, my jollof rice turned out very nice and tasty.
