My helper friend, who is an excellent cook, makes kimchi all the time. I've never tried his as he is a pepper head, and likes things REALLY hot. But I've had a locally made kimchi and if I remember right, it was the first fermented food of that type I tried back in 2008.
My stomach won't take even that level of spice these days, so I stick with my homemade sauerkraut. But those pancakes sure did sound good!
