Summer's Strange Kitchen - Easy Vegan Chocolate 'Ice Cream'

Hi Hive!

Ingredients:

  • 3-4 Bananas (Very ripe but not black yet, you want to go for sweetness, not make banana bread)
  • 2-3 Tablespoons Cacao powder (I prefer the really dark intense kind)
  • Honey/sweetener of choice (Optional)
  • Peanut Butter (Optional, I did not add this to my portion because I do not like it, my daughter loved the one with added peanut butter though.)
  • Pinch Salt
  • 1/2 Teaspoon Vanilla Essence

Method

Step 1 - Slice bananas and lay out on lined baking tray. Freeze for at least 1 hour, or overnight.

I drizzled about 1/2 a teaspoon of honey over the bananas before freezing them, this is totally optional but useful if, like me, you like to snatch a few pieces of frozen banana before baking. Seriously. It is too good.

Step 2 - I used a bowl and stick blender for this step...it worked out well enough but was far from ideal. Use a food processor for this step if you have one!

Combine all ingredients in a food processor (or bowl, if you are using a stick blender, which I do not recommend) and blend until smooth and fully combined.

Step 3 - Serve immediately or, if it melted a little bit while preparing, place in freezer till set.

That is some seriously dark ice cream! It looks and sounds delicious especially with the bananas.

It is overrated everywhere. Really not my kind of thing. Would prefer Halloween everyday.
