Recipe & Method
Ingredients
- About 2 Cups of mixed vegetables of choice (I mostly had onions and peppers)
- 1 1/2 Cups Flour
- 1Teaspoon Sugar
- 1 Teaspoon Dried basil
- 1/2 Teaspoon Origanum
- 1/2 Teaspoon Garlic flakes
- 1 Teaspoon BBQ Spice (Alternative: Paprika)
- 1/2 Teaspoon Baking Powder
- 1/2 Teaspoon Baking Soda
- 100g White Cheddar
- 1/2 Ring Feta Cheese
- 1/2 Cup Coconut Oil
- 2 Large Eggs
- 1/4 Cup Milk
Method
-Roast Vegetables in air fryer, set aside to cool before using stick blender
-Add Flour, Sugar, Herbs, Spice and Baking- Soda and -powder together, whisk to combine.
-In separate large bowl, whisk together Eggs, Oil and Vegetables
-Add Cheese and Feta
-Add Dry ingredients, mix till just combined.
-Bake in air fryer at 150C/300F for 20-25 Minutes
-Done! Due to always running out of baking cups at annoying times, I stopped buying them ages ago. A piece of tinfoil and the back of a glass works just as well most of the time.
