Hello, friends, food lovers, and community members!

Last week, we had to travel outside of town and wanted some easy food suitable for lunch that wouldn’t make a mess. There were many possibilities for making Indian food, but on Saturday, I decided to make pizza for dinner. I thought I could use the leftover dough and sauce to create lunch items, as well as some dinner rolls for the next day.

ingredients:

To make the dough:

  • 2 cups of white flour

  • 1 cup of coarse whole wheat flour

  • 1 tablespoon of sugar

  • 1 teaspoon of salt

  • 1 teaspoon of fresh yeast

  • 1 tablespoon of olive oil

  • For the pizza sauce:

    • 4 tablespoons of tomato paste
    • 3 garlic cloves, minced
    • 1 teaspoon of thyme
    • 1 teaspoon of oregano
    • 1 teaspoon of dried basil
    • 1 teaspoon of salt
    • 1 teaspoon of black pepper
    • 1 teaspoon of paprika powder
    • 1 teaspoon of oil

Dissolve the sugar and yeast in warm water and let them sit for a while to activate.

Once the yeast is ready, pour the mixture into the flour that already has salt mixed in.

Added lukewarm water until a dough forms.

Spread 1 tablespoon of olive oil over the dough and set it aside to rise.

Meanwhile, prepared the pizza sauce


by mixing all the sauce ingredients.

After the dough rose

First, I made our usual pizza.

For the next day's lunch, I used the leftover dough to create lemon-sized balls, along with the sauce, some cheese cubes, slices of paprika, spring onion, and fresh basil leaves

I pressed each lemon-sized ball flat and spread pizza sauce on top.

I then placed the paprika slices, onion slices, basil leaves, and cheese cubes on the dough.


After that, I pinched the edges of the dough together to form a ball shape.

I repeated the filling process for all the pizza balls.

Preheating the oven to 180°C, I baked them for about 20 minutes, alongside 3 mini pizzas and breakfast rolls:- just rolling the dough in balls and coated with seeds.

Here is the final result, ready for the next day! I displayed them with some tomato sauce, mini pizzas, and cherry tomatoes.
