Hello friends, community, and food lovers! Greetings. As usual, we have some vegetarian days in the week including Thursday and our food contains no egg, fish, or meat. Sometimes it is vegan, and other times we add milk products. This is our traditional Indian vegetarian food for our vegetarian days. Sometimes, I get confused about what to make for dinner and my husband says to just open the fridge. Today, I opened the fridge and found some vegetables, cottage cheese, and some cream cheese leftovers from other days. I tried to make something out of that, and it worked very well!
I couldn't find a name for this recipe yet but it resembles lasagna in structure.
Ingredients:
1 small cauliflower
2 carrots
4-5 potatoes little spots cut out.
1/2 red paprika
2 onions.
2 tbsp. white flour
1 tsp salt, 1/4 tsp chili flakes, 1/2 tsp black pepper.
1/2 box, 60 grams of cream cheese
1 tsp thyme
1 tbsp. butter.
1/4 cup cottage cheese
5 cloves of garlic.
some cherry tomatoes and olives are optional.
100 grams of normal cheese
Cleaned and chopped all vegetables
Peeled and sliced garlic and onion.
Washed and separated florets of cauliflower
Sliced potatoes. carrots and paprika.
All vegetables are ready.
Boiled water in a pan.
Put potato slices and carrot slices in the boiling water and just parboiled them, removed and kept aside.
In the same water, I did cauliflower florets. removed after parboiling them and kept them aside. Water is saved for use in the white sauce.
In the pan added butter.
Added thyme and garlic.
Then onion slices and cooked until the onion became translucent.
Removed and kept aside.
In the same pan added flour.
Adding 1 tbsp. butter roasted until aromatic.
In the bowl dissolved cream cheese using the vegetable water/ Stock.
Added dissolved cheese to the roasted flour. and made white sauce. when cooked removed from heat.
Organize slices of potato and carrots in the greased baking tray. Sprinkled a little salt and chili flakes on it.
Layered cauliflower on top of potato carrot slices
Red paprika
Cottage cheese.
Added saved chili flakes, salt, and pepper to the sauce.

And on the top normal cheese.
Baked for 20 minutes at 180 C.
Used some cherry tomatoes and olives on the top. and a new dinner has been created.
