Qurator's: Hive Top Chef! | Picnic Perfection | Chickpea salad, mini sandwiches, fruits and sweet cookies
Greetings dear friends, welcome to my blog. Today I am once again joining the weekly contest Qurator's: Hive Top Chef! | Picnic Perfection. What is your perfect picnic?, mine is the one I show below, I have never been to one and I have never prepared picnic food, so I'm just getting started in this topic. I know that they have a lot of snacks, some simple like sandwiches or burritos, others more nutritious like chicken wings or thighs, also included are fruits, cookies, can be sweet or salty, juices or soft drinks.
On a tablecloth and outdoors, all those assorted foods are placed to enjoy the picnic with friends or family.
For my perfect picnic I decided to prepare some mini sandwiches and a chickpea salad with mushrooms, red bell pepper, corn, peas and carrots. I dressed the salad with a simple vinaigrette based on vinegar, salt and oil. To complete the menu, I included fruit and some sweet cookies. I thought this picnic was perfect because it included mostly healthy food.
- ½ cup chickpeas
- 2/3 cup mushrooms
- 2/3 cup peas and sweet corn (assorted)
- 36 grs of red pepper
- 1 carrot of 50 grs
- 2 tablespoons oil
- 2 tablespoons white vinegar
- Salt to taste
- 3 slices of square bread
- 2 slices of leg ham
- 2 slices of yellow cheese
- Tomato sauce to taste
- 1 green apple of 121 grs
- 290 grams of milky milk cut in pieces
- 6 sweet cookies
1.-. We soak the chickpeas previously washed from the night before preparation. The next morning, we throw away the water, wash them again and cook them until they are soft. Once ready, remove them from the heat, strain and let them cool at room temperature.
2.-. Remove the skin of the carrot, cut it into small pieces and cook it until it softens. Wash and dice the red bell pepper and slice the mushroom.
3.- Prepare the vinaigrette, mixing two tablespoons of oil, two tablespoons of white vinegar and salt to taste.
4.- In a bowl add the chickpeas, red bell pepper, mushrooms, corn, peas and carrots. Mix, add the vinaigrette and mix again. Salt is to taste, it is recommended to adjust the salt level.
5.- We remove the edges of the square bread, spread the tomato sauce on it and place the slices of ham and yellow cheese on it. We cut them very small to obtain the mini sandwiches.
Now we serve our picnic, placing the chickpea salad, the mini sandwiches, the fruits and the sweet cookies.
