making chicken kebuli rice with a rice cooker

Hello everyone...today I want to share with you my chicken kebuli rice.This dish is my husband's favorite.I made an easy version of kebuli rice using ingredients I have at home.
I cook it using a rice cooker,so it's more practical because I can just do other household chores.Although simple,I find making kebuli rice quite time-consuming because there are so many ingredients and the cooking process is quite long.

This recipe is my usual one.I've recooked this kebuli rice recipe several times and it's quite delicious.The original recipe belongs to YouTube @CRCOOK.

I'll just show you all how I cook this kebuli rice, what ingredients I use,and the cooking process.But before I get into the kebuli rice recipe,I'll make some cucumber pickles to complement it.


Pickle ingredients:


2 Cucumber
1 Carrot
3 Chili
1 tsp Sugar
1/2 tsp Salt
1.5 tbsp vinegar
Water


How to make pickles:


• Dice the cucumber,chili and carrot.

• Dissolve the sugar and salt in a little warm water and stir until the sugar and salt dissolve.

• Add the diced cucumber,chili and carrot.Add water and vinegar until all the pieces are submerged.

• leave it in the refrigerator while waiting for the kebuli rice to cook.


Kebuli Rice Ingredients:


500 grams chicken
1/2 lemon (use only the juice for marinating the chicken).
1 liter basmati rice (I used special fried rice,which has a texture similar to basmati rice).
3 large green chilies


Ground spices:


7 shallots
5 cloves of garlic
1 segment ginger
1 tbsp coriander
1/2 tbsp pepper
1/2 tsp cumin
3 tomatoes


Aromatic and seasonings:


1 stalk lemongrass
5 cardamom pods
5 cloves
1.5 liters water
1 tbsp salt
1/2 tbsp sugar
1 tbsp stock powder
1/2 tbsp paprika powder (my addition)
1 packet instant curry powder
65 ml instant coconut milk


How to make:


• Clean the chicken,then rub it with lime or lemon juice.

• Grind the shallots,garlic,ginger,coriander,pepper and cumin until smooth,then transfer to a bowl.

• Grind the tomatoes again and set aside.

• Heat the oil,sauté the ground spices,aromatic herbs and curry seasoning.Sauté until the spices are cooked and fragrant.

• Add the washed chicken,stir until all parts are coated with the spices. Finally,add the blended tomatoes and cook briefly.

• Add water you can use chicken broth or water.Season with sugar,salt,chicken stock powder,and paprika.Bring to a boil.

• Add the instant coconut milk and cook again until the chicken is cooked through and the spices are absorbed.

• Once the chicken curry is cooked,prepare the rice by washing it thoroughly.

• Add the chicken curry,add the water,and place all the chicken in a rice cooker.Add chopped onions and large green chilies and cook until done.

• Once the chicken kebuli rice is cooked,take a few pieces of chicken and fry until cooked through.

• Serve the kebuli rice with the fried chicken and cucumber pickles.

Although the process is quite lengthy,nasi kebuli is truly the best. Looks like a must-try recipe. Bashmati rice is very delicious. I usually go to the Kebab house (restaurant in the Philippines) where I eat it.

Is it true? Honestly, I have never eaten basmati rice. It is quite expensive in Indonesia. I am curious and want to try eating basmati rice. Thank you for sharing dear ♥️
