Steamed black pandan sticky rice cake

Hi foodie friends, how are you today? May you always be happy. Today I will share a recipe for steamed sponge cake using black sticky rice flour as the base ingredient and also using pandan paste as the cake layer. Have you ever made or eaten this cake? This cake is delicious and just right because it is not too sweet and the savory taste of coconut milk makes this cake more delicious and appetizing. Let's immediately prepare the ingredients. Come on


Preparation :


Material A
2 eggs
75 grams of granulated sugar
1/2 tsp cake emulsifier
Pinch of salt

Pandan ingredients:
50 grams of wheat flour
1/4 tsp baking powder
20 ml vegetable oil
30 ml instant coconut milk
2-3 drops of pandan paste

Black sticky rice ingredients:
40 grams of black sticky rice flour
10 grams of cocoa powder
1/4 tsp baking powder
20 ml vegetable oil
30 ml instant coconut milk


How to make :


In a bowl, add all ingredients A then mix at high speed until white is thick and smooth


Divide the dough into 2


Take 1 bowl of dough then make a layer of black sticky rice by mixing all the dry ingredients (black sticky rice flour, cocoa powder, baking powder) and stir evenly.


Then add the liquid vegetable oil and coconut milk, stir again with a spatula until everything is mixed and there are no oil deposits. Then set it aside


Take the other part of the dough, do the same as the previous dough, add the flour, baking powder and pandan paste, stir evenly, then add the liquid vegetable oil and instant coconut milk, stir until no oil settles under the dough.


Prepare a baking sheet or mold that you have. Just grease it with a thin layer of oil. Pour the mixture alternately starting with the black sticky rice mixture then the pandan mixture.


Steam in a heated pan, add the cake, leaving a distance. Steam for 15 - 20 minutes.


Steamed pandan sticky rice cake is ready to be served.
