Cold and bored, I cooked.

It's unseasonably cool here today, overcast with almost constant drizzle.
At a roadside vegetable stand several days ago I had bought two vidalia onions complete with the green tops, almost a foot total length.
I remembered mama used to on rare occasions make creamed onion soup from the green tops, I decided to give it a try.
I found this recipe

Ingredients

2 Spanish onions peeled and cut in quarters
1 yellow onion peeled and cut in quarters
2 shallots peeled and cut in half
2 cloves garlic peeled but left whole
2 tablespoons olive oil
salt and pepper
¼ cup salted butter
2 sprigs fresh thyme
4 cups chicken broth use low or no sodium broth to control the salt
1 cup heavy whipping cream
Instructions
Preheat your oven to 450°F and toss the onions, shallots, and garlic with olive oil, seasoning them with salt and pepper and add the sprigs of thyme.

Transfer the seasoned veggies to a baking sheet with raised sides and roast them for about 15-20 minutes, or until they are soft and brown around the edges.
Transfer the roasted onions and any pan juices to a soup pot, add the butter, and sauté for 3-4 minutes.
Add the chicken broth and thyme, and let it simmer for 20 minutes to reduce slightly.
Remove the thyme stems, then transfer the mixture to a blender and puree, or use an immersion blender directly in the pot.
Add the cream, heat through, adjust seasoning, and serve your delicious Creamy Onion Soup

While doing all that, I put fresh Rosemary in a cast iron skillet with butter, then when it came time to cook I added EVOO (Extra Virgin Olive Oil) to the pan and cooked the steak, basting it with the butter mixture.
It was all very tasty, didn't take a long time but did dirty up more than my usual pots pans and utensils.

Creamy onion soup? Am just seeing it for the first time and it really looks nice and am sure it will be healthy as well.

oh, this sounds so good! I've had French Onion Soup many times in the past, but I don't recall hearing of a Creamy Onion Soup like this. It sounds wonderful and I bet it is quite tasty made with true Vidalia Onions! Thank you for sharing this recipe! 😋

I like onions so well that I sometimes sautée them in butter (with salt, & pepper) to eat as a side-dish on their own. For that, Vidalia Onions are the best, or any sweet onion will do in a pinch!
