Holla friends! Greetings from @kachy2022 to all reputation members of this community @foodiesbeehive. It's the month of May and it's been all rains since yesterday 1st of May. So I thought of making something delicious that suits the weather, so here we have fish soup.
Fish soup is actually a native delicacy from the eastern part of Nigeria, different from pepper soup, which is more generic in most parts of Nigeria and Africa as a whole.
So I used the following ingredients to prepare this simple meal;
Fish 500g
Stockfish cutlet 300g
Dry catfish 1kg
Crayfish 300g
Palm oil 1 cooking spoon
Pumpkin leaf 200g
Salt 1 teaspoon
Seasoning cubes 2
Ofor powder 2 satchet
Hot Pepper 200g
Meat stock
PREPARATION
STEP 1
Place meat stock on fire and bring to a boil. Add palm oil, salt, spices, and pepper and cook for 3 minutes.
Add the protein afterward to absorb the added spices.
STEP 2
Prepare vegetables, plug from stem, wash with salt or vinegar, and slice thinly. Set aside and go back to the pot of soup.
STEP 3
At this point, the soup is boiling hot, so the next step is to dissolve the thicker (ofor powder) in cold water to form a paste and add to the soup. This gives it a little thickness, so it's not too runny. Add the sliced vegetables, and we are done.
Here we have it. Our fish soup is ready in just 3 steps. It took me approximately 25 minutes to get the soup ready, and it invigorated our system against the cold.
