Holla amigos! It's a beautiful Friday. I hope your day is going great as planned. Today, I bring to you a delicious meal of bean cake, which has soft boneless chicken stuffed inside. It's a meal rich in flavors, folate, and fibers.
The beans are washed thoroughly, with the outer skin removed before blending with peppers, plenty of onions, and ripe chillis.
Ingredients
▪︎ 2kg honey beans
▪︎1kg boneless chicken breast
▪︎ 25pcs onion bulb
▪︎ 3 cooking spoon vegetable oil
▪︎ 500g pepper and chili mix
▪︎ 3 table spoon salt
▪︎ 4 seasoning cubes
▪︎ 1 tablespoon curry
▪︎ 1 tablespoon black pepper
▪︎ 1 tablespoon tyme
▪︎ 1 teaspoon coriander
▪︎ 1 teaspoon rosemary
▪︎ 1 teaspoon ginger powder
▪︎ 1 teaspoon garlic powder
▪︎ 1 bundle Plantain leaf
▪︎ pinch of nutmeg
COOKING PROCEDURE
STEP 1
Prepare chicken, wash, and cut into small biteable sizes. Add spices and sliced onions. Cook and set aside.
Wash the Plantain leaves and remove the stems for easy wrapping.
STEP 2
Blend beans with onions and pepper mix. Add chicken stock and vegetable oil. Stir well to check consistency.
STEP 3
Add all the spices and seasoning cube. Add 2 cups of water and stir. Check the consistency again and adjust where needed. The batter is not supposed to be too thick nor too watery.
STEP 4
Now start scooping the batter into wrapped leafs, add in chicken, and wrap up. Put into a large pot and continue the process until all the batter is finished.
Make sure to add water round the corners of the pot so it doesn't burn. Cook for 45 minutes, and our bean cake is ready to be enjoyed.
It's such a healthy and delicious meal. I enjoyed mine with a fried fish and a drink. It came out soft, fluffy, and delicious. The chicken also added a chewy texture to the bean cake.
