I made a delicious fried rice with creamy salad and chicken for my guest on Sunday, and I thought to share this lovely recipe in case anyone would love to try as well. Rice is a common food in most countries but the interesting thing is that it can be prepared in various ways so we don't get bored of eating them. Another secret of achieving a delicious fried rice is by ensuring you purchase very fresh vegetables. This is what gives the meal a good taste and its vibrant look.
Ingredients
• 2kg chicken
• 35cl vegetable oil
• 3 onions
• 200g spring onions
• 4 seasoning cube
• 3 tablespoons of salt
• 4kg rice
• 300g sweet corn
• 2 bell peppers
• 300g bean sprout
• 1kg carrots
• 300g green peas
• 300g kidney beans
• 1 tablespoon black pepper
• 3 tablespoon curry
• 1 tablespoon tyme and rosemary
• 2 tablespoons tumeric
• 1 teaspoon cumin, coriander, and cinnamon
Cooking Procedure
Step 1
Prepare the chicken. Wash properly, add spices, salt, seasoning cubes, and chop in onions. The chicken has to be well spiced to get a good stock needed for the rice.
Step 2
While chicken is cooking, start chopping the vegetables. I scrapped the carrot, washed properly along with the other vegetables, and I chopped them to my desired shape and size.
Step 3
We don't want the rice sticky, so I presoaked the rice with very hot boiling water and covered it up to steam. I washed after 15 minutes, removing excess starch and dirt from the rice. Put the rice in the pot you intend to use for the main cooking with 2 cups of water and cook.
Step 4
Add the chicken stock into the pot of rice on fire, salt, seasoning cubes, and spices. Add the kidney beans so it can cook along with the rice. Stir with a wooden spoon and allow to cook for 20 to 25 minutes.
THE VEGGIES
Get a nonstick pot and add vegetable oil. Add onions when hot and then the carrots after 2 minutes. Allow carrots to fry for 2 minutes and add sweetcorn, bean sprout, green peas, salt, and spices. Stir and fry for 2 minutes, and then add the bell peppers and turn off the heat.
Pour the fried veggies into the large pot of rice and stir. It was difficult for me to stir at this point because the quantity of rice was more than the pot. I had to stir gently, and my hand couldn't get beneath the pot. I stir as best as I could and then turn on the fire for 10 minutes so that the flavor of the food can be released.
The food is ready and everyone can enjoy the delicious fried rice. I grilled the chicken and then did a pepper sauce, which I mixed with it.
I also prepaid a delicious creamy salad to go with the rice. I wanted my guests to have a nice time and enjoy a delicious meal, and they all loved it.
The rice came out very delicious and non sticky. I sprinkled black pepper on it, stired, and served to every one of my guests. 😋
