Holla amigos! I hope you had a lovely day. I want to share my grandma Melon recipe with a little twist. I love and enjoy melon soup, especially when it is well fried or boiled in a way that makes it look like scrambled eggs. Melon soup is one of my best and my husband's best soup. Melon seeds are rich in vitamins such as protein, good fats, and essential minerals like iron, calcium, and potassium. Melon soup is also a good support for digestion due to its fiber content.
Ingredients
▪︎ 2 cups blended melon seeds
▪︎500g cow beef
▪︎ 1 onion bulb
▪︎ 2 cooking spoon palm oil
▪︎ 200g dried tilapia fish
▪︎ 100g dried hake fish
▪︎ 200g Stockfish fillet
▪︎ 100g cow skin
▪︎ 1 table spoon salt
▪︎ 2 seasoning cubes
▪︎ dried bitterleaf (Vernonia amygdalina)
▪︎ okazi leaf (Gnetum africanum)
▪︎ 1 satchet hot pepper
COOKING PROCEDURE
STEP 1
Cook meat and season with salt seasoning cubes, onions, and pepper. Cook for 5 minutes to extract the meat natural juice and then add 2 cups of water to cook properly.
STEP 2
Wash dried fish and Stockfish, add to pot of meat, and cook together. Also, wash cow skin throughly and add to it
Add palm oil and seasoning cubes to the mix protein broth.
STEP 3
Prepare the melon by adding a few drops of hot water and salt. Mix with pressure until the natural oil from melon is released. Set aside and check on proteins.
Now, form small balls from mixed melon and drop in the food as it cooks. Do not stir. Cover when you put the last ball and cook for 7 minutes before stirring.
STEP 4
It's time for the vegetables to go in. First, I added dried bitterleaf followed by the oziza leaf,
Cook for two minutes and turn off heat. It is ready to be enjoyed with any swallow of choice.
The soup is easy to make if you follow my recipe closely. I noticed most of my melon balls scattered in the soup, which I found that it's from the mixing of the melon. I didn't mix long enough as grandma did. I stopped immediately I saw the first sign of oil from melon. This affected the melon shape. Aside from that, the taste of soup and consistency was perfect. I know I would do better on my next try.
