Smoked Mackerel Fish in Pepper Flavored Rice

Greetings my friend's, a happy Saturday to you. Smoked fish has a unique taste that takes our meal to a higher level, especially with mackerel fish. I wanted spicy rice with palm oil and a smoked fish. It turned out perfectly exactly how I wanted.

Rice is one meal that is global and enjoyed in various ways, and I love to explore in the best way possible. This particular recipe is different, and aside from the smoked mackerel fish, I used some spices I had never used before to prepare my rice, and it was delicious and full of flavors.

The list of ingredients used is stated below

Ingredients
▪︎700g smoked mackerel fish
▪︎ 1kg rice
▪︎ 2 seasoning cubes
▪︎ 300g crayfish
▪︎ 6 onions
▪︎ 10pcs hot pepper
▪︎ 1 sachet pepper soup spice
▪︎ a handful of scented leaf
▪︎ iru (locust bean)
▪︎ chicken stock
▪︎ 3 cooking spoon palm oil
▪︎ salt

COOKING PROCESS
STEP 1
Wash rice properly and presoak with boiling hot water. This will help remove excess starch.

STEP 2
Prepare onions and pepper. I used the processor to get a rough blend which is what I need for my recipe.

STEP 3
Put 3 cooking spoon of palm oil and add pepper mix, add iru (locust bean) to extract the natural flavour. When fried, add salt and seasoning cubes.

STEP 4
Add pepper soup spice, chicken stock, rice, salt and 3 cups of water.

After 15 minutes, add crayfish and smoked fish. Stir and allow to cook for 10 more minutes.

STEP 5
Add vegetables and stir, turn off heat and serve because it's ready.

The outcome was spectacular! The rice has lots of intriguing flavors that would make you crave for more. It was delicious and I enjoyed mine with a chilled drink. What a refreshing and healthy meal.
