When a place is so good and you were so surprised by the quality of the food, maybe you shouldn't be ashamed of going back to the same place just the day after again.
Okay this is not my normal course of action. When I am in a new place or in a new country where there is so much to explore, I usually don't find any reason to go back to the same place again. Because there are so many options, why head back to the same?
But on the other hand....if these guys are making such daily fresh dishes, dependent of what they have caught in the morning and changing their menu by that the whole time.....Isn't it as if you went to eat from a new menu as if it was like a new place?
Maybe then you have a good reason to head back to the same place again
Fresh from the sea
Just look at this blend of langoustine ceviche (ceviche as in cooked by citrus fruits in stead of by using heat) with hot peppers in there as well as ginger and lemongrass. And then the heads and legs grilled on the barbeque so that you still have to crack them to get all of the meat out.
I love the concept of using the meat of this sea creature in two different ways!

Or what about this lobster ravioli with also some lobster ceviche as garnish and a sauce that is like a bisque which is a kind of seafood soup. Ow come on, what a genius idea and what a bonanza of flavours.
The funny thing about all of this, all of these dishes didn't break the bank at all while say if you would order these kinds of dishes in the Netherlands...this would be priced at a totally different range. The creativity put in the dishes just like the other day before when I had visited all of the creativity was there.

O Molos
So the place is called O Molos and has a very outdated instagram page that is seems that they made when all lockdowns had just been lifted. Regardless, it gives you quite a bit of an idea what kind of thing they are capable of making.
Not so fancy in visuals but even better in taste was this orzo (a sort of pasta dish which looks a bit like rice) with fish where the orzo had been made juicy with the juice from the fish heads instead of what you normally would do with butter. Talk about using everything from the whole fish!
I talked to the guy for a bit and the place is family owned and based and the mamma is still in the kitchen. That is also the troubling thing because getting additional staff in there is not so easy as in Greece there is also a shortage on all kinds of staff.
So there are challenges as they also have a little shop with local products from everything else that they use. To keep it all running you need people for it, and getting the people as just not so easy.

Regardless, I would totally recommend this family restaurant to everyone as it is located in a very remote bay with only 1 road leading towards it. But getting the boat into the bay and staying there overnight as the Poros bay is quite secure from the wind is also an option.
