How to prepare My local delicacy.

Good day everyone, it's that season of the year in this part of the world, where farmers have started harvesting some of their farm produce.
And one of such products here is MAIZE.

And i tell you during this season, i get most exited because of this particular farm product. It's one of my best crops because with this particular crop alot of various delicacies can be make from it and one of such is CORNPUDI (popular known as Ukpoka in my local dialect).

It's a meal common known with the great people of eastern part of Nigeria.
It is rich in it's nutritional contents
It's rich in taste
It's ingredients are easily accessible
Affordable and
Easy to prepare .

Ingredients for making cornpudi.

  1. Corn or mazie
  2. Palm oil
  3. Protein of one's choice (fish, crayfish, seafoods etc.)
  4. Onions
    5.pepper
    6.salt to taste.
  5. Water..
  6. Wraper (leaf, foil paper, zip-lock bag etc.)

Procedures for making cornpudi

  1. First peel the leaf of the corn.
  2. Remove the corn from the cob
  3. Wash the corn to remove the dirts
  4. Using a blender, grinder or your mortar and pestle blend or grind the corn to the desired texture. As for me, i don't like a very smooth texture cornpudi, so i will be pounding mine with mortar and pestle as you can see.

5 i pounded until i got my desired texture.
6.i peeled, wash my ingredients and i set them aside. For this particular cornpudi i will be making use of crayfish as my source of protein and i will be using of black pepper as you can see below.

  1. I added the ingredients into the blended corn, i added a little water, salt to taste and mixed the corn properly to get the desired mixture that i needed as you can see

  1. At this point the cornpudi is ready to be wrapped.
  2. I got my plantain leaf, wash and prepared it before putting my mixed cornpudi inside.

  1. After wrapping it, i arranged them in a pot, added some quantity of water to the pot, and i covered it with the plantain leaf in other to enable it absorb heat.

  1. I put on the heat, and allowed it to to cook for 45minutes

  1. After 45 minutes, i turned off the light .
    Best served with coke -cola drink or any drink of your choice.
