Hello foodies, Today, I made a very simple spaghetti meal for lunch. I haven't eaten spaghetti in a while, so today I made sure I ate a simple one, very easy and fast to cook. Took barely an hour to make it.

Here's what I used and how I did it.

Ingredients
400g Spaghetti
4 small onions
5 fresh tomatoes
1 green pepper
1 carrot
Some chopped cabbage
Cooking oil
60g Tomato paste (1 sachet)
Blended pepper, ginger & garlic (you can use just pepper)
Seasoning: Maggi shrimp cube, salt, mixed spice sachet.

The Process...
First, I prepped my vegetables. I cut the onions, tomatoes, and green pepper, and kept the cabbage and carrot ready.

Then, I started cooking. I heated about 4 ladles of my cooking oil, then went in with my onions and fried it until soft, and added the fresh tomatoes and let them both fry for some few minutes, about 5mins. stir continuously to avoid it sticking the cooking pot.

Next, I added my 60g tomato paste and fried it well for about 5mins, then added my blended pepper mix and all the seasonings.( shrimp cube,salt, spice)

After that, I poured in 1 and half cup of water and brought it to boil. I broke the spaghetti in half and added it right into the pot to cook in the sauce.

After cooking on medium heat for almost 10mins,I added the veggies. I added the carrots first, then the green pepper, and the cabbage last: in the order of hardest veges to softer ones.

Then I let it all simmer together on low heat until everything was tender and cooked. that was an additional 10mins

And that was it. A simple, one-pot spaghetti lunch, ready to eat.
