My Family's Favorite Stew Recipe.

Hello Hivers and my foodies friends .

Welcome to my blog. I am excited to be here again to show my culinary skill. I made grilled chicken stew or soup though is a well known delicacy even a little girl can prepare it but I am thrilled to share this recipe with you guys. In my country, Nigerian .This soup or stew is an everyday dish in most homes. We love it. This stew can been eating with almost anything.
Let me tell you my family little secret. We know food are being store in the fridge for many goods reasons but ours is for economical reason and freshness. We squeeze our budget like no man's business 😃
Enough of talking much let's proceed.


INGREDIENTS
10 cups fresh tomatoes
6 pieces of pepper
2 kg of grilled chicken
210g of Tomato paste
I medium onion diced
1/2 tsp of natural ground mixed spices
A thumb size of Ginger
1 cup of vegetable oil
1/2 teaspoon of salt
700ml of Water
Chicken bouillon cubes (optional)
4 cloves of garlic

STEP BY STEP FOR THE PREPARATION OF GRILLED CHICKEN STEW.

I have already grilled my chicken the previous day. I fogot to take pictures of it because my kids were not at home.

  • Wash the tomatoes, ginger, pepper and set them aside, peel and slice the onion.
    *Cut the tomatoes and blend together with the garlic , ginger and pepper. Afterwards, boil it on the stove till the water dry up looking like a paste.

*Place a pan or pot and set it on a medium heat . Note: you can use any oil of your choice , I used vegetable oil. Then add oil and onion and saute for 5 minutes .I don't want my onion to translucent.

  • I carefully scoop the tomato paste from the tin into the pot, add natural mix spices and salt, stir very well , leave to boil for 3minutes, then add the tomato mixed with (ginger,garlic and fresh pepper,) allow to boil for 5 minutes.

    I don't have my chicken broth, like I said , I grilled the chicken the previous day but I forgot to preserve it and it got spoilt. I add 2 boullioin cubes to taste and allow to simmer for 5 min ,You can substitute for crayfish if you want.
    Add 700ml of water and stir and continue cooking on medium heat for 20 mins . Lastly, add grilled or any meat you have at hand and sprinkle a handful of scent leave (Nchanwu ) in my dialect. The aroma is so good. The end result is so amazing even without the chicken broth.

I already cooked yam waiting to enjoy it with this delicious stew. I recommend this delicious stew for you. It's very easy to make. I store the rest in the fridge . Thanks for stopping by
