Yum Yum! I love egg sammiches and toasted cheese, I never tried it this specific way but now I want to. I cook mine as a grilled cheese but same thing, egg and cheese breakfast sandwich. I worked in a resto as a server where they toasted cheese as a garnish, that stuff is delish. Thank you for sharing your new perspective on breakfast.
